New Recipe: Full GAPS Ham and Bean Soup

Here is another simple yet delicious soup recipe. This diced ham is my absolute favorite from Seven Sons. Navy beans are full GAPS legal. It is recommended to purchase dry beans, soak and/or sprout them and then slow cook them until they are tender. This helps remove the phytic acid (anti-nutrients) and makes them far more digestible. In a pinch, the Eden Organic beans are a great thing to keep on hand, especially if you have been on full GAPS a long while and your gut has had a good deal of healing. This company does soak their beans overnight before cooking which will help with digestibility.

Ingredients:

3-5 T Duck fat, or animal fat of choice

1 large yellow onion, chopped

2 cups diced ham

2 cups diced carrots

2 cups diced celery

5 garlic cloves, pressed or minced

2-4 cups navy beans or 2 cans – amount depends on preference in soup

4-5 cups meat stock

2 tsp onion powder

1 tsp thyme

Salt and pepper to taste

Directions:

In a large stock pot sautee onion in fat until translucent (7-10 minutes) over medium heat. Add some salt to the onions while stirring occasionally. Add in the garlic and stir for 1 minute. Add in the ham and cook, stirring occasionally, for 3-5 minutes. Add in the carrots and celery. Sautee for 3-5 minutes. Add in the seasoning, stock and navy beans. Bring to a boil. Lower heat to a simmer, cover and cook for 25 minutes or until the carrots are tender.
