This Korean Beef is made with only a few ingredients and comes together quickly! It is wonderful leftover and a really tasty full GAPS meal.
Ingredients:
2 lbs ground beef
6 cloves of garlic, minced
2 Tablespoons raw honey
1/2 cup coconut aminos
1 teaspoon fresh ginger, minced
1 teaspoon crushed red pepper – optional. This amount gives it a nice kick. Use less for less spicy.
Salt and pepper to taste
1/2 cup sliced green onions
2-4 cups fresh broccoli, steamed
Cauliflower rice

Directions:
In a large skillet over medium high heat cook the meat until brown. I like to salt my beef some while I’m breaking it apart. Add in the garlic when the beef is nearly all browned. Stir for 1-2 minutes to incorporate.
While the beef is browning, combine the coconut aminos, honey, ginger and red pepper flakes in a small bowl. Stir to combine.
Add the sauce mixture to the beef and turn the heat down to a low simmer. Stir well to incorporate all of the flavors. Salt and pepper to taste. Put a lid on and allow the flavors to meld for 5-10 minutes.
Serve over cauliflower rice (full GAPS legal) or white rice if not on GAPS. Top with sliced green onions and steamed broccoli. Enjoy!
