Full GAPS Legal with Non-GAPS Substitutions
GF/DF/Egg free/Soy free/Tree Nut free

This simple dish is a delight to the taste buds. It requires a little extra time to marinade the sirloin steak and sear it but it is worth it!
I will give full GAPS legal info below and some alternatives if you are not on GAPS.
Serves 4-6
Ingredients:
2-3 lbs Sirloin steak, cubed or sliced thin
6 cloves garlic, minced or pressed
2 tsp ginger paste – I grate a piece of fresh ginger into a paste
6 T + more of beef tallow or other animal fat of choice, divided
salt and pepper to taste
2 medium zucchini, sliced thin
2-4 cups coleslaw mix: I typically do 2 cups shredded carrots and 2 cups shredded broccoli stalk. You can do more or less depending on your preference. I like it to feel hearty.
1 cup sliced mushrooms, optional
2 tsp garlic powder
1/2 cup + 2 T Teriyaki sauce: Full GAPS recipe below or, if not on GAPS, Primal Kitchen makes a great option.
Cauliflower rice (full GAPS) or Regular white rice if not on GAPS
Avocado oil to help marinade
Directions:
First, slice your sirloin into thin strips or cubes. Place in a bowl, or whatever you like to marinate in.
In a small bowl combine about 1/2 cup avocado oil, 1/2 cup Teriyaki sauce, garlic, ginger paste and some salt and pepper. Adjust avocado oil and/or teriyaki sauce if needed. Combine and then pour over the sirloin. Cover and let marinade for 30 minutes to 8 hours in the fridge.
Heat a large skillet or deep pot to medium and add in 2T animal fat. Add in your coleslaw mix, zucchini and mushrooms. Season with garlic powder, salt and pepper. Sautee until soft about 10 minutes. I tend to have to add more fat as the veggies soak up the tallow while they cook.
Transfer the cooked veggies to a plate and set aside.
Add more fat to the pot and begin searing each piece of steak. Sear for 2-4 minutes per side, depending on the level of done-ness you prefer. Remove pieces to a plate once seared. After all the steak has been seared, add everything back in and combine with the cooked veggies. Give it a toss. Serve over cauliflower rice (GAPS) or regular rice.
Drizzle extra teriyaki sauce over all. Enjoy!
Full GAPS Teriyaki Sauce:
- ½ cup coconut aminos
- ¼ cup fresh pressed orange juice or water
- 3 tbsp raw honey
- 2 tsp fresh grated ginger
- 3 garlic cloves, pressed or minced
- 1/8 tsp chili flakes
Add all ingredients to a small saucepan over medium heat and simmer for a few minutes to thicken a little bit.
