New Full GAPS Recipe: Hungarian Goulash

This is a quick and tasty full GAPS dinner. It works in a big pot on the stove top or you can make it in a slow cooker.

Full GAPS, Egg Free, Dairy Free, Nut Free, Gluten Free, Soy Free

Serves 4

Ingredients

2 T beef tallow or animal fat of choice

1 medium onion, chopped

2 garlic, minced

1 lb ground beef (ground turkey or chicken would also work)

1 1/2 cups meat stock

1-2 cups tomato sauce (want less sauce go with 1 cup)

2 cups diced tomatoes

1 tsp Italian seasoning

1 tsp paprika

Optional: 1 1/2 cups lentil noodles, uncooked**

If NOT on GAPS: 1 1/2 cups rice noodles, uncooked

Optional: Cheddar and parsley to garnish

Directions

In a large skillet over medium heat, add in the fat and onion and cook for 5 minutes. Add the garlic and stir for one minute. Add beef and break it apart. Add the spices and continue to stir until the beef is browned. Add the stock, tomato sauce and tomatoes. Bring to a boil. Add the noodles. Stir to combine. Lower heat to a simmer, put on a lid and cook until noodles are soft.

If you are using a slow cooker add all to the slow cooker after the meat is browned. Stir to combine and cook on low for 30 minutes to 2 hours (this will depend on your slow cooker) until noodles are cooked.

***A note on noodles: Rice noodles are not GAPS legal. If you are very advanced in your healing and have been on full GAPS a while it is okay to use lentil noodles on occasion.

If there are no noodle options available to you, you can plate it over a bed of cauliflower rice or make some zucchini noodles. That is also delicious.
